Origin: From the single vineyard “Alepotrypa” in the heart of Kalliaro Field in Atalanti Valley, where the Greek Assyrtiko found ideal soil to develop its distinctive personality.Vinification: White vinification in temperature-controlled stainless steel vats.

Tasting notes: The expression of the multipurpose variety of Assyrtiko in the single vineyard ‘Alepotrypa’ reveals an extremely attractive wine. A sharp, lemony wine with bright and light yellow color, citrus aromas, nuances of minerality and some white flower notes. Rich mouth feel with high acidity, mouthwatering with aromas of peach and nectarine. Intense and long aftertaste.
Food pairing – Serving suggestions: Enjoy it with seafood, cous-cous with shrimps, shellfish, grilled fish, green salads as well as herb-crusted lamb or pork. Best served at 8-10°C.

These wines are born from the indigenous Assyrtiko grape, cultivated in some of the world’s oldest vineyards, dating back 3.500 years, on the volcanic island of Santorini, where nothing is ordinary! Assyrtiko-Santorini world class still dry whites can be drunk young or aged, as they are precious, truly ageworthy wines; the ideal complement to haute cuisine, fish, seafood and, surprisingly, even meat dishes. These terroir driven wines of distinct character are structured on exciting minerality and savorous density. They both reflect the unique volcanic and anhydrous soil of Santorini, which is an internationally acclaimed “pedigree”.

The Domaine Hatzimichalis has chosen to serve a unique ecosystem.This lies in Opountia Locris, a site in the valley of Atalanti in Central Greece which is surrounded by Mt. Knimida to the north, Mt. Chlomo to the south, Mt. Parnassus to the west and the northern Eubean Gulf to the east. The main natural trait of this ecosystem and its uniqueness is the cool breezes that flow from Mt Parnassus to the sea and vice-versa, in summer and winter alike.
This is the setting for the four blocks of terroirs of Domaine Hatzimichalis: the Old Vineyards, the Lower Vineyards, the Upper Vineyards –all known for centuries as localities and vine-growing sites– and New Vineyards, the terroirs created by the Domaine Hatzimichalis. Each of these blocks is divided into individual terroirs, and these in turn into different sections where we systematically cultivate different grape varieties.
