The vineyards are at an altitude of 250 to 500 meters. lying on flat fields, semi-mountainous & steep mountainous slopes.
With a Mediterranean climate, having cold winters, hot summers, and long dry autumns. During autumn, and winter months, cold air passes from mountain Dirphi, carrying dew that supplies the vineyards with essential humidity for survivability.
The long periods of sunshine help grapes ripen ideally in this part of central Greece.

After the grapes are delivered, they are pressed in a pneumatic wine press, which is enclosed on every side, and it is constantly cooled to make necessary skin contact easier. There are stainless steel tanks exclusively for fermentation of white and red wines, as well as the winemaking method of “Ganimede”.

There is also a bottle Rinser/filler (a vacuum filler with nitrogen) – corker – capsule – labeler, a cellar where wine ages, and a wine tasting room. We have recently gained a HACCP certificate which ensures the constant check of the products from our fields, to the consumer’s dining tables.
