The White Knight is created from selected Moschofilero grapes from the Boutari winery in Mantineia. The base wine is matured on its fine lees for 6 months and then the Methode Traditionnelle is followed. It is corked after a stay of 18 months with its lees. On the glass we find a wine of a straw green color, with good “string” of small persistent bubbles. On the nose there are strong citrus aromas, flowers framed by brioche, yeast, followed by nuts. The mouth is pleasant, with crisp acidity and a long aftertaste.
