103 Roditis is a different white wine created with a certain perspective.
A wine that express the strong typicity of Roditis together with the
expression of the terroir of its region. Its origin from the mountain
vineyards of the Slopes of Aigialeia and the purity of the clones of only
reddish Roditis gave it a rich aromatic expression and a crystal acidity
that made the grape ideal for the creation of a quality modern white
wine. The winemaking based on cold vinification but also on the use of
fine lees has given it aromatic complexity and durability, as well as a
rich, delicious flavor.
Careful selection of Roditis mountain grapes to come to the winery in
the ideal state of maturity and hygiene. Harvest in small crates up to 20
pounds. The grapes are staying overnight to chill and and afterwards
they are slowly pressured to receive only the fractions of the most
aromatic and most acidic. Fermentation at low temperatures of not
more than 15 ° C. After the end of the fermentation it stays in fine lees
for 2 months. Bottled in an inert gas atmosphere.
Food Pairing:
A modern and rich white wine filled with the typical aromas of Roditis
and the terroir of the Slopes of Aigialeia. Explosive combination of citrus
fruits, exotic fruits, green apple and green herbs of Greek nature on top
of a fine mineral background. Delicious and rich in the mouth with
intense but refreshing acidity accompanies perfectly the Olive-oil-andgreens preparations of Greek cuisine, feta and salty white cheeses,
roast goat-sheep meat and pasta, and of course fish and seafood.
