Vinification / Maturation: For the production of the base wine, Moschato Spinas grapes are careful selected. Skin contact for 2 to 3 hours at a temperature of 4-6 °C, pressing, selection of free run mast and the first alcoholic fermentation in stainless still vats at controlled low temperatures (13-16°C). Then, after a few months of stirring in fine lees, the liqueur and selected yeasts addition, the wine is driven for the second alcoholic fermentation in sealed stainless steel temperature controlled tanks in which the bubbles are formed. The alcoholic fermentation lasts for about 30 days and the maturation period 3 months. The process is completed with bottling in isobaric filler at 0°C.
The love of Muscat White for sunlight is common knowledge. It thrives when the sun warms up its small berries, bestowing on their thick skin a freckle-dotted yellow-gold color and uniquely concentrating the variety’s aromas and flavor. As a result, small-berried Muscat White yields dessert wines of international stature (“Muscat of Patras”;“Muscat of Rio Patras”; “Muscat of Rhodes”; “Samos” ; and “Muscat of Cephalonia”).
Every year the Association of Friends of The American Farm School of Thessaloniki in Athens, they are raising money for a full scholarship of a student.
Their main source is an American bbq that the last two years, due to covid 19, was cancelled.
In this point its our contribution, since Nikitas, Cinque’s Oenologist and Sommelier, has graduated from the AFS. He chose 4 wines, under a special label, and from the sales we will give to the scholarship.
