Origin: From selected vineyards of the private owned vineyard of Domaine Hatzimichalis in Atalanti Valley, Central Greece.
Vinification: Classic red vinification under controlled temperature. It ages for 12 months in a mix of new and used French oak barriques.
Alcoholic strength: 13,5% Vol.
Ageing potential: Recommended for long ageing. You can drink now or keep it for at least 10-15 years.
Tasting notes:
Deep red colour. Elegant bouquet with expressive aromas of black fruits like blackcurrants and plums along with spicy notes and hints of freshly cured tobacco. An intense, sophisticated and well-structured abernet Sauvignon with rich tannins, concentrated flavours and persistent finish. An exquisite combination of strength, complexity and elegance.

Food pairings – Serving temperature:
Ideally suited to lamb, spare ribs, grilled steak, game and flavorful hard cheeses. Best served a 16-18 οC

Cabernet Sauvignon (French: [kabɛʁnɛ soviˈɲɔ̃]) is one of the world’s most widely recognized red wine grape varieties. It is grown in nearly every major wine producing country among a diverse spectrum of climates from Canada’s Okanagan Valley to Lebanon’s Beqaa Valley. Cabernet Sauvignon became internationally recognized through its prominence in Bordeaux wines where it is often blended with Merlot and Cabernet Franc. From France, the grape spread across Europe and to the New World where it found new homes in places like California’s Santa Cruz Mountains, Napa Valley, New Zealand’s Hawkes Bay, Australia’s Margaret River and Coonawarra regions and Chile’s Maipo Valley and Colchagua. For most of the 20th century, it was the world’s most widely planted premium red wine grape until it was surpassed by Merlot in the 1990s.

The Domaine Hatzimichalis has chosen to serve a unique ecosystem.This lies in Opountia Locris, a site in the valley of Atalanti in Central Greece which is surrounded by Mt. Knimida to the north, Mt. Chlomo to the south, Mt. Parnassus to the west and the northern Eubean Gulf to the east. The main natural trait of this ecosystem and its uniqueness is the cool breezes that flow from Mt Parnassus to the sea and vice-versa, in summer and winter alike.
This is the setting for the four blocks of terroirs of Domaine Hatzimichalis: the Old Vineyards, the Lower Vineyards, the Upper Vineyards –all known for centuries as localities and vine-growing sites– and New Vineyards, the terroirs created by the Domaine Hatzimichalis. Each of these blocks is divided into individual terroirs, and these in turn into different sections where we systematically cultivate different grape varieties.
